Spaghetti and Meatball Pie

A one-skillet meal using leftovers. Additional vegetables may be added. Makes a complete meal with a nice salad of mixed baby greens. 25-30 minutes 4-6 servings Ingredients 2 T olive oil 1 onion, chopped 4 cloves garlic, chopped 1/2 tsp chili flakes 8 oz cooked spaghetti 1 tsp salt 1/2 tsp pepper 2 c red pasta sauce, warm 8-10 cooked meatballs, cut in half 4 oz sliced mushrooms 5 eggs 1 c cream 1/2 c + 2 T romano cheese 1 c + 2 T mozzarella cheese, grated 4 T italian parsley, chopped 2 T fresh basil, torn Garnish: extra-virgin olive oil, parmesan cheese, basil leaves Directions 1. Preheat oven to 350 degrees. 2. Heat oil in skilled. 3. Add onion and cook 2 minutes. 4. Add garlic and chili flakes and cook 1 minute. 5. Add spaghetti, salt and pepper and toss. 6. Add 1 c pasta sauce, meatballs and mushrooms. Toss 7. Beat eggs and cream in bowl. Add cheeses, parsley and basil and mix. 8. Pour egg mixture over spaghetti an let cook 2-3 minutes. 9. Push in sides of egg mixture allowing liquid to run under. 10. Sprinkle top with 2 T parmesan cheese and 2 T mozzarella cheese. 11. Bake in oven 25-30 minutes. 12. Cut into wedges and serve with remaining 1 c of pasta sauce and garnish with olive oil, parmesan cheese and basil.
