This is a popular soup in many Spanish restaurants, especially in the Ybor City area of Florida. 2-3 Hours 10-12 Servings Ingredients 1-lb. Dried Garbonzo Beans 2-3 cans can be used instead-Drain them 1 Ham Bone w/Some Meat Left on it or 2 Smoked Ham Hocks 1 Bay Leaf 1 Medium Onion 1 Pinch 12-14 strands Saffron 2 Smoked Chorizo Can use Pepperoni Stick if Chorizo cannot be found 1-2 Lg. Potatoes Salt Port or Bacon Directions 1.Pick through beans then soak them for 24 hours-Drain cans if using canned beans and skip to step 3 2.Wash thoroughly 3.Trim ham from bone and dice into half inch cubes 4.Skin chorizo or pepperoni and dice 5.Place beans, ham bone, chorizo, chopped onion, bay leaf, saffron, salt, pepper and salt pork/bacon in a pot and cover with water 6.Bring to boil then drop to simmer and let simmer until beans are done, usually 2-3 hours, less time required for canned beans 7.Dice potatoes, add and cook until potatoes are tender 8.Serve with crusty bread and enjoy
