Spicy shrimp in a rich and creamy tomato sauce over whole wheat penne. 10 minutes 4-6 Ingredients 2 tbls. olive oil 1 lb jumbo shrimp peeled and deveined 2-3 cloves garlic finely chopped 1/2 teasp. ground red pepper 1 14 oz can petite diced tomatoes 1/2 cup heavy cream salt & pepper to taste 1/2 lb. whole wheat penne fresh basil Directions Place penne into boiling water. Put olive oil into hot pan, I use the 12 inch Wolfgang Puck Stainless frying pan. Saute shrimp with ground red pepper and garlic. When shrimp is browned and just about cooked through set aside in bowl. Put diced tomatoes into same hot pan shrimp was cooked in, add salt & pepper and cream. Simmer until sauce thickens. Add more ground red pepper depending on your taste. When pasta is finished cooking add shrimp to sauce and toss with pasta. Add finely chopped basil and parmesian cheese just before serving.
