Spinach Bread

Great for parties or as an addition to an appetizer. Use your imagination. You can add whatever greens you like, collards are great, too. You can add pepperoni, ham, or salami, whatever you like. This is great hot, warm, or cold. 30 to 40 minutes 6 servings Ingredients 1 box Wolfgang's pizza dough prepared, or 1 lb. of store bought dough 1 10 package of leaf spinach 3 cloves garlic, minced 3/4 cup shredded mozzarella cheese 1 Tb. extra virgin olive oil 1/4 tsp. salt 1/8 tsp. fresh ground pepper 1/4 tsp. hot pepper seed add more, if you want it spicier small amount of olive oil to brush the dough during cooking crisco for the bottom of the pizza pan or cookie sheet Directions Preheat oven to 350 degrees 1. Cook the spinach in a saucepan, remove and drain well, leave in the strainer 2. To the saucepan add the oil and the garlic, saute, but do not brown the garlic, just enough to infuse the oil and the garlic. Add the spinach, salt and peppers and mix together, set aside 3. Lightly grease the bottom of the pizza pan with the crisco, this keeps the dough from sliding 4. Flatten the dough, spreading out until it is like a pizza, do not have any holes in the dough 5. Spread the spinach on the dough, leaving about an inch all the way around the dough, add the mozzarella on the top of the spinach 6. Start to roll the dough and then fold in the sides and roll again, folding in the sides, like a jelly roll. Press to seal the seam. It will look like a loaf of bread 7. Bake 15 minutes, then brush with the olive oil, bake another 15 minutes, until it is nice and golden brown and when tapped on the bottom, it sounds hollow. 8. Remove to a rack and cool for 5 minutes, slice and serve. You can eat this hot, warm or cold Hint: You can make this with pepperoni and mozzarella and omit the spinach. Whatever combination you choose.
