tamarind spiced roasted chicken 45mins 4 large serving Ingredients 1 whole chicken 1 tbs tamarind paste 1tsp chili powder 1tbs ground ginger 1tsp garam masala 2tbs raw sugar 1/4 cup hot water pinch cayenne pepper 2 tbs grated ginger root 1 tbs soy sauce 1 tbs vegetable oil Directions cut chicken into quarters, dissolve sugar, tamarind, and all spices, soy sauce, vegetable oil in hot water, marinate cut chicken at least 4 hrs in spice blend.remove chicken from marinade bake 45 mins in 350 convection oven..1hr conventional oven...enjoy great served with rice, and cut cucumbers in yougurt and roasted ground cumin seed.
