An easy, delicious and comforting addition to any meal. Perfect for holiday dinners or any special occasion when plain old green beans or corn just won't do! It's so tasty that even the kids will gobble up their vegetables! 45 min. 6-8 Ingredients 1 can shoepeg corn, drained 1 can french style green beans, drained 1 can cream of celery soup 1/2 c. diced green peppers 1/2 c. diced onion 8 oz container of sour cream 1/2 c. shredded cheddar cheese 1 sleeve crushed Ritz crackers 3/4 stick of butter or margarine Salt & Pepper to taste Directions 1. Preheat oven to 350 2. Drain green beans & corn and put into large mixing bowl. 3. Add chopped green peppers, onion, cream of celery soup, cheddar cheese, sour cream and salt & pepper. 4. Mix well & pour into greased 13x9x2 casserole dish. 5. Melt butter in microwave. 6. Pour crushed Ritz crackers into separate bowl & pour butter over crackers, coating well. 7. Sprinkle crackers on top of casserole. 8. Bake uncovered for 45 minutes or until top of casserole is golden and bubbly.
