Yellow Bread

A healthy, hearty quick bread that'll put vegetables into 'em.
Great as a breakfast on the go with fruit spread, or cream cheese. A kid friendly cross between corn bread and zucchini bread. Bakes in mold shapes well. Good as a muffin, also. 60 mins 12 one inch slices Ingredients 1.5 cups baking mix 1.5 cups fine corn meal flour 1.5 cups grated yellow summer squash with or without seeds- about 2 medium 1 large egg .5 - 1 cup sugar or sugar substitute 3 teaspoons of ginger, nutmeg and cinnamon 1 tablespoon vanilla 3 - 4 drops lemon or orange extract 2 - 3 tablespoons of milk if needed to make the consistency a little lighter than a brownie mix Directions 1. Grate the squash 2. Add all ingredients to a mixing bowl. 3. Whisk, let sit 5 mins so the corn meal can soften. 4. Pour into greased or sprayed loaf pan. 5. Bake 325 for 60 mins. Slice after cooling.
