I grew up in Tampa and had the best yellow rice and chicken at the Columbia Restaurant. I have made their recipe and it is delicious, but I had to find a way to have a great meal with less time to prepare. This recipe is very good and will satisfy your craving for yellow rice and chicken until you can made the long version. 20 minutes 8-10 Ingredients 1-Whole Rotisserie Chicken I prefer Sam's or Costco picked into pieces off bone 2-packages of Vigo Rice 8 oz each 1-jar Mario green olives w/pimento stuffed 1-can LeSeur petite peas-added after finished cooking 1/2-4 oz Farmer John ground Chorizo-or your favorite ground chorizo 3 Tablespoons-Tomato base Soffrito found in spanish section grocery store 1/2-onion-chopped fine 1/2-green pepper-chopped fine 2 tablespoons-chopped fine garlicI buy a large jar already chopped 5 cups of chicken broth-I prefer Kitchen Basics, one box is 4 cups, I add 1 cup of water w/2 envelopes of Herb-ox chicken broth 2 tablespoons butter 2 tablespoons catsup Season with garlic powder, pepper, 1/4 teaspoon salt, italian seasoning. I do not measure the seasoning, but I am not heavy handed. I sprinkle the garlic power, italian seasoning and pepper on onions and pepper, add salt. If I had to give you a measurement, I would say all but salt, use 1 teaspoon garlic, and 1/2 teaspoon pepper and italian seasoning. Directions Place 2 tablespoons of olive oil in bottom of Rice cooker pot insert. Turn the rice cooker on cook Add: onion, pepper, garlic, chorizo, soffrito, saute for a couple of minutes Add: Rice rice package has seasoning still around with vegetable mixtures and coat rice Add: Chicken Broth for 2-8 oz packages your will need 5 cups broth Add: Cut up chicken, stir and mix around Add: Olives and mix Add: 2 tablespoons of butter and catsup-mix Close lid and let the rice cooker cook until rice is complete, when the cooker turns to warm, open lid and pour drained peas on top, close lid and let it sit on warm for about 5 minutes. Serve and enjoy!
